RV-LF Strawberry “Cheesecake”

So, there are many strawberry cheesecake recipes out there most likely, including raw vegan ones; however, mine’s a very easy one that is low fat, raw vegan, and super easy and clean. I prefer not to use coconut oil or too much if any agave nectar since those will only add unnecessary ingredients to the body.

Recipe

You Will Need:

– Pitted Dates

– One of the following nuts or a combination: walnuts, cashews, pecans

– Strawberries (as many as you want) ~ around 2 handfuls

– 1 Banana (or more if you want)

– 1/4 cup of Vanilla Almond Milk

– 1 handful of cashews or 1/2 cup of coconut oil optional

– 1-2 Tbs Agave Nectar optional

Directions:

Crust:

  1. Blend/Process in a blender/food processor the handfuls of nuts (really it’s up to you. Depends on how thick you want your crust. Also depends on what kind of texture you want your crust to have. If you want less fat in it, then use less)
  2. Then add in the dates and blend/process the until the mixture blends (You can add in more dates depending on how thick and sweet you want the crust to be)
  3. Take out the mixture and press it into your pie pan. Mold it along the pie pan so that it goes up to the edges and covers the bottom evenly. Below is a picture of mine. I didn’t make the sides that tall.

The amount of dates and nuts will be up to the size of the pie and how sweet you want it. I recommend around a 50:50 ratio of the two. The sweeter you want it, more dates. The less fat you want, put in less nuts. You can substitute in flax seeds or rolled oats as well.

Filling:

  1. Using Cashews: If you want the filling to be creamy, but you don’t want to use coconut oil, soak around 1 cup of cashews for a few hours (or just get right to it). Blend the cashews with the almond milk
  2. Blend in the strawberries, banana, and agave nectar with it.
  3. Fill the crust with the mixture
  4. Place in the freezer for a few hours and then enjoy~

OR

  1. Using Coconut Oil: Blend the strawberries, banana, almond milk, coconut oil, and agave nectar together.
  2. Pour the mixture into the crust.
  3. Place in the freezer for a few hours and then enjoy~

OR

  1. No Coconut Oil or Cashews: Blend the strawberries, banana, almond milk, and agave nectar together
  2. Pour the mixture into the crust
  3. Place in the freezer for a few hours and then enjoy~

Feel free to top the pie with a few sliced strawberries~
