Fudgy Flourless Vegan Microwave Brownie

photo (1)

It always happens. You crave something sweet, decadent … chocolate-y. Something like a brownie. Of course, because I don’t hold these things in my home, I always have to instead resort to baking or eating something sweet to satisfy my craving. However, fruit doesn’t always cut it and I do prefer to eat healthy just because my body thanks me for it ultimately. So, here’s an egg-less, flour-less, healthy 1 minute microwave brownie. It doesn’t taste any worse than a normal brownie either!

– 2 TBS Almond Meal (or Ground Oats / Oat flour if you want)

– 2 TBS Flax seed Meal

Note: Can use 4 TBS Flour, but that wouldn’t be flour-less… or 4 TBS oat flour, almond meal, etc. mix and match basically

– 2 TBS Unsweetened Cocoa Powder

– 2-3 TBS Honey Powder (to make it vegan, use Agave Nectar)

Note: Adjust amount for how sweet you want. I found 2 or 2 1/2 work for me

– Pinch of Salt

– Pinch of Baking Powder

– 2 TBS Coconut Oil

– 2 TBS Water

– 1/4 Teaspoon Vanilla Extract

1. Add all of the dry ingredients into a mug or a bowl (the Almond meal, flax seed, cocoa powder, honey powder, salt, baking powder)

2. Add in the wet ingredients into that mug/bowl (the coconut oil, water, vanilla extract)

3. Stir well and put into the microwave for 1 minute

Note: To make it chewier, microwave for about 10 seconds longer
