Healthy Creamy Avocado (& Tomato) Noodles

It’s been a while since I’ve put up a recipe … in fact it’s been a while since I’ve had spiralized noodles. But I figured, since this one worked and it was so easy and simple to make with ingredients that are commonly held in the home, I should put it down. I’ve cooked and baked a lot the past year (some pics on instagram and others on my facebook). It’s only too bad that I didn’t jot down how to make them or what not. But since I started this blog because of my fascination with consuming raw vegan foods, I should put this one up. photo 1 (1) Now, I’m not going to lie, I added chicken breast into this as well since I had to eat that, but this was a good way to cleanse after eating so much bread lately … Had a blueberry smoothie afterward which is so simple to make and delicious as well~ Anyways, let’s get started: Recipe: You Will Need: – Spiralizer – Blender Ingredients: – 1 Cucumber (I used an American one, so they’re larger) – 1 Tomato (Note: 1/2 will be blended/pureed, other 1/2 chopped to garnish) – 1/2 Avocado (or the whole avocado if you want it to be creamier) – Lemon/Lime Juice (I used both. Used half the juice of a small lemon and lime) – 1/4 cup Water (Can vary depending on how much avocado is used and how you want the texture to be) – 1 Garlic Clove – 1 tsp Himalayan Salt (Can vary depending on your taste buds/preference) – Some Cilantro optional (also can save some for garnishing) Directions: 1. Blend/Puree he avocado, half the tomato, garlic clove, lime/lemon juice, water, cilantro, and salt all together until thick, smooth. If you want a different texture, go for it! Don’t forget to save the other half of the tomato for later! 2. Spiralize your cucumber into noodles. I did half into the thick spirals and the other half into thin ones. 3. Chop and dice into cubes the other half of the tomato. 4. Mix all together and garnish the noodles with the tomato and some cilantro.
