So you know how I always make my raw vegan pie crusts with dates and a nut (usually walnuts)?
Well, these taste great by themselves too and can be eaten like they’re cookies. Just process/pulse dates and walnuts together.
Recommend pulsing the walnuts first (or any other nut you want) so that it’ll blend easier with the dates. Add more pitted dates if you want it sweeter and less walnuts if you want less fat in the cookies. Afterward, just mold them together to make your cookie! 😀 Just had my pie in a bowl and my emergency ice cream cookie/sandwich too hehe
